INTERNET FUN

This logo is one of several employed by the University of Missouri at Columbia for its athletic teams, the Tigers (supposedly named for a Unionist Civil War regiment raised from Columbia).

But there's another animal pictured here and its inclusion was not an accident.  Can you see it?  I'll give you two hints.  Look at what isn't there.  And it's Missouri's official state animal for which the great state of Missouri was once and, while I haven't kept up with innovations in this particular field, probably should still be greatly celebrated.

Go.

UPDATE: In the comments, Little Myrmidon got it right away.  In the center, between the M and the U is head of a mule.
